Hi there, it’s Jasreen! Quick fun fact about myself: I love Thanksgiving. If it were up to me, we would have a Thanksgiving feast once a month! Unfortunately, that’s not quite healthy 😛 One of my favorite easy dishes is mashed potatoes!
I was craving mashed potatoes recently, and wondered what would happen if I used cauliflower instead of potatoes. The results were surprisingly delicious, and way healthier!
I created this recipe by myself, so there’s no formal link. But here’s the gist of it:
Serves: 2-3 people
-1 cauliflower head
-1 clove garlic (optional)
-1 tbsp butter
-3 tsp salt
-dash of thyme & oregano (optional)
I LOVE garlic–adds a little kick to the flavor!
Step 1: Wash cauliflower head and cut off stems.
Step 2: Place in container, cover with water, leave on stove for 10-15 minutes (on high)
Step 3. Carefully remove cauliflower, and place into food processor (our processor is small, so I had to cut the cauliflower into smaller pieces)
Step 4: Grind/Chop up the cauliflower, add the garlic glove, butter, and salt (or your “toppings” of choice) and mix it all together in a bowl
Wah-la! Super easy!
-chicken breast (or leg pieces if you prefer)
-3 tsp salt
-2 tsp pepper
-1 clove garlic
Step 1: Place chicken pieces in an oven safe pan
Step 2: Squeeze 1/2 orange juice & 1/2 lemon juice
Step 3: Sprinkle salt and pepper; make sure to flip the chicken sides so that the flavors are evenly distributed
Step 4: Sprinkle minced garlic (or garlic powder)
Step 5: Squeeze remaining 1/2 of lemon juice
Step 6: Let bake for 25-30 min on 400 degrees F.
Mango Avocado Salsa:
-1 ripe mango
-1 ripe avocado
-2 tsp salt
-1/4 cup diced red onion (optional)
Step 1: Dice avocado and mango
Step 2: Sprinkle salt
Step 3: Squeeze lemon juice
(I know, super easy, but tasteful!)
