Tomato Brown Rice Pilaf


Hey there fellow foodies, Jasreen here! I didn’t follow a recipe for this pilaf, and it’s an example of success-by-winging-it!

4-5 cloves garlic, minced
2 cups brown rice
3.5 cups water
3 tablespoon olive oil
1 cup diced red onion
salt & pepper
1 tomato, diced
1/2 cup fresh tomato puree
*optional: 1/2 cup frozen vegetable

1. Rinse 2 cups of brown rice under water
2. Sautee garlic and onion in 2 tablespoons of olive oil (on High, in a non-stick pan)
3. Add the diced tomatoe and tomatoe puree
4. Add 3.5 cups of water to the brown rice, and mix into the satueed garlic/onion/tomato
5. Add 1 tablespoon of salt and 1/2 tablespoon pepper (I also added cayenne pepper)
6. Wait for the water to come to a boil
7. Turn the heat to Low and fully cover the pan
8. Cook for 40 minutes*
*Note: If you wish to add frozen vegetables, add them after 20 minutes and re-cover the pan

Wah-la! Your yummy rice is ready!
